Banon is a goat cheese produced in a charming little hilltop village in the Alpes de Haute-Provence. The French label PDO guarantees respect for know-how dating back to the Middle Ages, or even Roman times according to some.
Mentioned for the first time in 1270 in a picturesque description of the Banon Fair, this cheese takes its original taste from the technique, very rarely used, from the soft curd: the milk is kept at body temperature, adding rennet and half an hour later, the transformation is carried out.
Another peculiarity, which gives it its surprising taste, is the folding of the cheese in chestnut leaves, a centuries-old peasant tradition of preserving surplus cheeses.

Ingredients: Hautes-Alpes pork (raised in compliance with the Mountain Indication specifications), pork liver, poultry liver, 10% Banon PDO goat cheese, salt, spices, thyme liqueur, aromatics.
All the ingredients except a part of the spices are of French origin. Homemade gluten-free terrine, no eggs, no additives.
