Fine lavender or wild lavender: every year, at the end of summer, we survey the crest of Geruen, located in the Monges (04) and rising to more than 1,800 meters above sea level. The goal is to fill our bags with wild lavender (or lavandula augustifolia).
Lavender from the Alps is the best for the quality and depth of its aroma. This is without counting its taste properties which place it as a universal panacea.
Our tasting tips: finding lavender in a culinary product can sometimes be surprising. But that is to confuse the particularly subtle bouquet of wild lavender with that of lavandin, cultivated to produce the essence used in perfumery. It is also ignoring traditional Provencal cuisine where it is often used as a flower or honey.
How to taste the lavender flower terrine? To put it simply: on a nice slice of lightly browned country bread, close your eyes and let yourself be transported over the hills where we pick it.
The ingredients: pork from the Hautes-Alpes (raised in compliance with the Mountain Indication specifications), pork liver, poultry liver, salt, spices, fine lavender from Provence, lavender liqueur.
All the ingredients except a part of the spices are of French origin.
